Locally Laid Egg Company, based in Wrenshall, MN, aims to change the way eggs are produced in America – big words from a little chicken, but they’re plucky.
Jason Amundsen, Locally Laid’s Head Clucker, started with a backyard flock – also known as gateway livestock. This inspired a passion for poultry knowledge ranging from Michael Pollan’s Omnivore’s Dilemma to the many books of environmentalist farmer Joel Salatin.
Jason saw there were no eggs from our immediate region. Truly, there was a need for a closer-to-home producer. Jason was mentored by the fine folks at the Lake Superior Sustainable Farming Association, University of Minnesota Duluth Center for Economic Development and Springfield Farm in Maryland. Thus, Locally Laid was hatched.
We’re creating real food for neighbors, while treating our livestock and the planet well in the process. By sourcing and selling locally, we’re championing Agriculture of the Middle and strengthening rural communities.

In 2022, Locally Laid launched “AirB-n- BAWK!” – an experience for the farm-curious traveler.
Guest Farmers stay in their contemporary, 10x 20 tree house, The Perch – built 6 feet up for an excellent pasture view, or their budget-friendly, solar bunkhouse, The Nest. This immersive experience structure, located directly on the pasture, is part living space/ part chicken coop. Large windows divide the sections giving guests a “Peep Show” (rated P for Poultry) when bunking with the birds.

PREP | In large bowl add hard boiled eggs, mayonnaise, yellow mustard, kosher salt and black pepper. Use potato masher to mix until smooth. Add additional salt and pepper to taste.
Top each bagel with egg salad, 2 slices bacon, 2 slices tomatoes and small handful of baby arugula.

Prep | Spread one ounce of scoopable cheesecake on each crepe. Fold each crepe in half and then again fold in quarters. Place in 350 degree oven for 2-3 minutes until warm all the way through. Warm strawberry topping. Arrange serving plate with crepes layered together with strawberry topping on top of crepes. Garnish with powdered sugar, cinnamon spice, mint sprig and orange zest.
